Pavone’s Inaugural Chili Cookoff

The competition got heated at Pavone’s inaugural Chili Cook-Off on November 5, 2010.  More than 20 employees brought in their secret chili recipes to be judged by local celebrity chefs including ”Chief Chili” Dawson Flinchbaugh, co-owner of Flinchy’s restaurant in Camp Hill; Chef Michael Finch, restaurant chef coordinator at HACC/Bricco; and Victor Kendlehart, HACC culinary student. The judges critiqued the entries on flavor, texture and consistency, use of ingredients and presentation. Amanda Arce won the Anything Goes category with a thick beef and kidney bean chili with a side of homemade cornbread. Darby Hughes dominated the Texas Chili category by turning an old family sauce recipe into a secret spicy chili.
